Try out some fun, budget friendly recipes that the full family can get involved in! DIY snacks are not only healthier, but often cheaper than packaged ones. Making them with the kids can be lots of fun and a great activity to do together.
Mini Muffins
Ingredients:
1 medium egg
60ml vegetable oil
125ml semi-skimmed milk
125g golden caster sugar
200g self raising flour (or 200g plain flour and 3 teaspoons baking powder)
50g of filling choice - e.g. chocolate chips, raisins, blueberries.
Method:
Wash your hands
Preheat oven to 200C / 180C fan / gas 6
Line muffin tray with 10 to 12 muffin cases
In a bowl, beat your egg with the vegetable oil and milk.
Add sugar until you have a smooth batter
Sift flour into bowl and mix again until smooth
Stir in your filling of choice
Fill your muffin cases evenly
Bake for 20 minutes, or until muffins have risen and are firm to touch
Allow to cool, then enjoy!
Frozen Mixed Berry Bark
Ingredients:
500g / 2 cups of yoghurt (low or 0% fat)
2 tablespoon of honey
A handful of your favourite fruit mix - e.g. strawberries, blueberries, raspberries
1 tablespoon of dark chocolate chips (optional)
Method:
Wash your hands
Mix the yoghurt and honey together in a bowl
Line your baking tray with foil and pour the mixture on top
Using a spoon, spread the mixture across the foil
Sprinkle your choice of fruits across the mixture - ask the kids to create a pattern if they're feeling creative!
Place in the freezer for about 3 hours, or until the yoghurt is firm
Once set, break snack size pieces off and enjoy!
